Media where mind control/hypnosis is a main ability
Is there anime,manga, cartoon or comics etc that have a main character that mainly uses mind control or hypnosis?
Manga-wise, Maou no Hajimekata is one I like and pretty close to what you want. Some asterisks.
The main character, unapologetically awful (ex)-human being, well, he uses whatever he can get his hands on. But his stated motives are eternal youth, power, wealth and women(in actuality, those are only about 90% of his motives, but spoilers!). He is very happy to brainwash, dominate or bind through magical contract the women he wants. If the eternal youth, power and/or wealth do not do the trick.
He has a main harem of about 6 people(debatable). Of those, all of them are bound by contract, two of them are bound by Several, one is hypnotized to love him, one is brainwashed into a double agent, one was trained into a sex addict until she gave up her soul for the D... This manga is a lot of things, but it is not subtle.
When he does not do that, he still manipulates and corrupts the hell out of them, and everyone else besides, which I find has a similar appeal. Sometimes he Could mind control people in an instant, but chooses to fuck with them normally just to flex the muscles.

But when he hypnotizes the girls he realizes that they have severe traumas and decides to use the hypno app to help them instead. Due to this the girls are so grateful that they really fall in love with him even when they aren't hypnotized, but he didn't realize that and thinks that they only care for him while hypnotized. So because of that he doesn't makes a move on the girls unless they're hypnotized which ends up frustrating the girls who want him to realize that they love him even without the hypnosis.
