I have a scenario in mind for a JanitorAI character: the User is a bandit who manages to hypnotize the character using a very powerful magic spell; the character loses their moral compass and ends up becoming the User's henchwoman.

I have two characters in mind: Mimosa Vermillion or Eris Boreas Greyrat. Which character do you think should be the protagonist of this scenario?

I'd say Eris. Mostly because I know nothing about Mimosa as a character.

Eris would be both interesting an humorous in such a scenario, given her temper and how it contrasts with being hypnotized. She seems like the type to be more susceptible than she thinks.
