I'll never understand why old dub directors told voice actors to record in that stilted direct way for so long.

It's a combination of a lot of things as to why old dubs sound stilted. For one thing, the voice actors were typically either very inexperienced or flat out has no training and were not actors, as this type of role was seen as unbefitting for a "real actor's" time. Along with that, due to VERY LIMITED budgets, they were usually asked to do only one take, and were provided little direction, sometimes not even being shown the clip in question, let alone the context.

Dubbing back then was pretty much an amateurish profession . You got less pay than regular voice acting for example.

It wasnt really until the success of shows like Sailor Moon, Dragonball, Evangelion and Pokemon that people started treating it with more care and better production values.
