Isn't that just erasing it? I mean at least in that tutorial, you don't re-use it for anything, so it should be fine if you just erase it.
If you're looking to actually cut and keep it, I use the lasso tool in photoshop to make a circle around the eyes, then right click -> Layer via Cut.
Another way is to just duplicate the image and mask everything BUT the eyes if you want to make changes later (say you want to un-erase some parts of the eye because you erased too much)
