As a filthy heroes casual I'm curious in Three Houses can you make her or anyone a dancer?
Or even with all the school stuff everyone is still limited to what type of unit they can be

Somewhere in between? You can technically make characters into other classes, but the brute-forcing required to get certain combinations into remotely viable states makes it rather not worth the effort.

Dancer is a little particular. Somewhere in the winter stretch of Part 1 the school hosts what's called the White Heron Cup where each House submits one student to a dance competition, if the student you pick wins they gain the ability to use the Dancer class.

Unfortunately it's limited to only the one student and you can only enter certain students (and Edelgard isn't one of them, which is BS) and you have to WIN to get it, which winning isn't hard but does require some player effort.

You might want to double check that. Any of the students can be a dancer. The only limit is that they need to be students to compete and they need a charm of 13 to win. If there is any guy or gal in your house that you want to see dressed up, including Edelgard, you can do it easy enough.

In three houses you get 1 single character to be a dancer, they have to win a dancing contest though by having a minimum charm. Though once you choose your candidate you can give them lessons to also give them a charm boost, so it's really hard to mess up. You could interpret those dance lessons as hypnosis if you wanted though XD.
