I thought this was already posted, twice.
I checked, and I didn't see anything.

you wouldn't remember it.
you cruel mastermind! your words exacerbate my deranged curiosity, how could you do this to me?

I'll sleep just fine, as I can't smell.
Oh? That's interesting. I wonder if your sense of taste is duller than average, as well.
Though I imagine even if it had a smell, you wouldn't remember it.
Unless you were...coerced into remembering and loving the smell.

short answer is probably that Penway has a more limited taste pallet than those who can smell. But despite taste and smell being as intimate as they are the tongue is still 100% involved with telling the difference between sweet, sour, salty, bitter, and umami (whatever the fuck that is) which means that if Penway's tongue isn't impaired then she can probably tell the difference in the taste of most things
trying to compare the sensations of people with sensory disabilities and those who don't is one of the most fascinating and annoying things to ever pop up in a conversation.

Trying to explain how my taste would be different would be like trying to explain color to a blind person. Perhaps even harder, as I can't actually say for certain if it is diminished.

Or maybe there's a brief moment in time where the victim can recognize the smell, but by then it is too late, and they slowly succumb and go under. ...that's... actually kind of hot to think about. Though I guess that still doesn't answer your question of what it smells like. I'm going to go with the scent of honeydew, but with a subtle undertone of sweat.

OH OH OH my family and I found a good way to sort the colorblind thing. Imagine/look_up trees at autumn time...got it?... good. now if you count the number of different shades of red, green, orange, and brown. you'd probably come up with a number more than 3 which is how many your average red-green colorblind person would see.

hotness is a thing that we agree on for this topic, and if I ever get to work your description of what is now my official imagining of "hypnosmell" into a story I'll have a massive smile on my face.
