From my limited understading of Fate/Stay Night, Saber is the reincarnation of King Arthur, and is refered to as such.

No, she IS King Arthur. She hid her womanhood and thus everyone remembered her as a man, if your wondering how she fathered Mordred. Turns out Merlin was a mischievous playboy, he decided to fuck with King Arthur by giving her a dick. Then, Morgianna took her sperm and made Modred as a near perfect copy like a homuculus. This is all canon.
