If Haruhi believes hypnosis is real, then it is, by that worlds established rules, so I think if she thought she could be hypnotized, she would be.
Also, just think how OP it would be if anyone ever hypnotized her, I mean they can make her believe anything and if she believes the thing, it happens. They have a more polished version of Haruhi's control over the world because they can just make some crazy shit up and boom- there it is

I like to think the world would just become a blank slate if she ever gets hypnotized :P

That's why you have to be careful during the induction and specifiy that you (the master) and her are all that exists in her mind. After that you will still exist and you can recreate the world as you wish.
