mostly, the professor tries NOT to read peoples thoughts without permission or reason... well, then he started to more, the x-men protested, and he left the team - given jean grey's costume, this is relatively early in the timeline

besides, he was distracted by getting head from a hot chick

.... or alternatively, he did know, and is just covering his bases - I'd rather get head from raven darkholme then jean grey, especially if I had to continue to work with jean

On top of that, they later noted that Raven has an innate resistance to mental scanning and influence, presumably due to extreme brain plasticity. (I always assumed Reed Richards has it as well, for the same reason.)

Pffft Prof X and his moral ground. I want to see a universe where he use his power without restrain. His reason to create school for the gifted is just a cover to collect the hottest girls and creating a harem.
