I remember seeing these pages floating around. her excuse for being able to resist the mind control was sooo awful. it was on par with people playing corrupt a wish and being like "granted, you get a muffin, but also your pants are now on fire because you didn't say I shouldn't set your pants on fire"

I thought you were kidding, but no. Jones's explanation for her resistance is:
Jones said:
So whatever mind control you're trying on me--which, you don't know me well enough to know this, is a BIG issue for me--you aren't very good at it.

Because yes, I do want to find who's hunting you...It's the most important thing in the world to me...but there's still lots of room for things that are ALMOST as important.

Things like...beating you within an inch of your life with this cast-iron paperweight. Just as a "For example."

I mean, what is THAT?

On one hand it's understandable that Jones would resist the mind control given her past with Purple Man. On the other hand the explanation feels too far-fetched to be plausible given Star's abilities are drawn from the Reality stone (meaning she can rewrite reality whenever she wants).

Yeah, that's what I thought the explanation was going to be, especially with it being "a BIG issue for [her]"

Yeah, that's some lousy and/or lazy writing there. I would have been fine with her being able to resist mind control due to her past. That would have been a decent explanation. Much better than "You didn't say NOT to beat you up, du-hurrrr..."

It's the equivalent to "I'll go, but I'll be complaining the whole way there"

I still think that's the excuse, just more implied than stated. Purple Man's powers make it impossible to do anything EXCEPT what he told you to do, which Jessica spent months to years trying to resist (depending on the version.) So it would make sense that with a lesser form of mind control, Jessica would find away around it and still resist in some way.

From Jessica's Wiki Page:

Telepathic Resistance: Due to her experiences with the Purple Man, Jessica had mental blocks placed in her mind by Jean Grey. These mental blocks give her a degree of resistance against mind control, even if that mind control is pheromone based rather than telepathic, though it seemed that she had to "trigger" this resistance on her own.[99]

Overcoming a powerful mind Controller is essential Jessica's main story arc, of course she's not going to let some newbie who's not even trying to hide she's controlling her get the better of her.
