Meanwhile, take look at Ryota Mitarai. This person, in Episode: Hope, wanted to brainwash everyone. There would be no other emotions, nothing. He would effectivly kill everyone, leaving puppets.

Thing is, it's same tape that he was making back then. When it wasn't even half-finished, it caused Junko to cry. Think of it, how long would it take him to complete that video? Few months? He stated he already got drafts and so on, he wasn't stumbling in it anymore. He just had to use his own talent to quickly finish art itself, as brainwashing part was done. Or nearly done.

Junko Enoshima saved the world, because she stopped the biggest, most atrocious hope-inducing incident in history of humanity.

Sorry, got to stop you there. Junko's motivations and intentions weren't to save the world, and the rise of those who embraced real hope and the future weren't part of her plans. The victory of Naegi and the others was a case of "evil wins when good does nothing". In fact, she did everything she could to either twist people towards despair, to kill hope as it occurred, or to stonewall hope so that it could never be applicable (as you would see in Dangan 2, where everyone is essentially locked in a stalemate after she drops the truth on Hinata and the proto-Despairs), or be turned into a "black hope" (as you saw in Ultra Despair Girls, where Naegi's sister has to make a choice on whether to kill the elementary Despairs to prevent them from using the Monokuma kids to blow things up).

You're using the outcome and consequences of a narrative's development and plot to define a character's motivations after the fact. Junko found hope boring as hell. It just so happened that Mitarai's way of spreading hope was incredibly flawed, and was a false hope. The only reason why she was crying was that brainwashing would help her plan get kickstarted, so she was crying with joy that opportunity had fallen right into her lap.

Now, if you're just being silly about this, that's an entirely different thing. :P

Seriously, everyone in the whole Danganronpa cast from both animes would be better at saving the world than Junko.

Junko Enoshima's not much more than a generic doomsday villain who's characterization makes no sense whatsoever. How does someone get happy at being under despair? Don't they contradict each other?

She's a Despair Troll. I thought the series was pretty clear in that characterization. Just like how the Joker was an agent of chaos in The Dark Knight. They just want to see the world burn and society come undone, because that's how they get off.
