Is there any desire for another hypno-related RPG?
I'm trying to sharpen my game making skills, mostly, but I also want to put something out there that might be worth giving me money for (as a donation just for people who want to--the game would be free) because I'm broke as hell and have been unemployed for a couple years.

Is this a niche people even still want filled? Has your favorite genre been covered? Would you tolerate RPGMaker default assets if the story was worthwhile, or would it need to be more unique than that visually to catch your interest?

I can respect rpgmaker games using base assets if the story and presentation of it all is exceptionally good, personally. A lot of people would see it's rpgmaker and pass on it, especially if it's niche.
It would be most worthwhile to invest in either making some assets yourself or getting yourself a partner to help out. Changing the look of the UI, music and things like that can go a long way.

No matter how niche it is, people here on the hub would likely give it a try if it shows potential. However, if it is something you personally want to shine, try sharpening your skills on something less niche and make a few bucks to put into this one.

I don't know about anybody else but I have always wanted a sub game where a female protag is hypnotized at a stage show, but I love games like tales of Ameria where there are multiple ways to get hypnotized

There are many. Less so in English than in Japanese. There's no reason not to, as long as there's quality in how it plays and dialogue and such. That's the biggest problem, lack of effort and lack of completion.

I mean, Overwhored used a lot of generic RPGMaker assets.

OneShot's an amazing game and that's on RPG Maker! Really I think it's what is done with the engine that can make a game good or bad.

This. Quite a few of my favourite H-games are RPG Maker - Three Charms, Caliross, Undercrust, Tales of Ameria, Overwhored...

OP, I'd say go for it - but make it stand out from the droves of generic 3-minute games that flood pretty much all "make game creation easier" type programs.
It might be good to commission some decent art, or find some online that you're free to use.

Don't forget OFF, which was made in RPGMaker 2003.
