While yeah character tags are usually their own pools to use, I think ya got a good collection of Kaa'lin pics going on from so many different artists, which is what I'd suggest for the point of the pool to be.

That's your right and choice. As for me, I usually try and have completely different pairings for everyone each run.
The gameplay can feel a lot different when you mix up the couples, especially after you get the kids, not to mention if you raise the difficulty level (especially in Conquest, yikes!). There are also some interesting little tidbits in some of the support conversations.
Regardless, you can always recruit Maid!Hinoka from someone else's castle—there are several forums where you can request characters with certain skills and classes.
