Friend, you need to dial back how complicated you AU is. There's a reason Crisis on Infinite Earths happened.

If she was immune to the darkness, her heart would not have needed to hide within Sora's. She would simply have been immune to any attack by the Heartless. In fact, her heart's ability to flee her body and hide elsewhere makes this even more plausible as once her body is an empty shell, evil forces could enter it and use it as a puppet.
The Darkness was explicitly trying to steal her heart, not corrupt it, so it fled. Further, a heartless body is a extreme fucking anomaly. In every other instance a body looses it's Heart it is consumed by Darkness and turned into a Nobody. Kairi's body did not. While she does have a Nobody it was born from SORA's Body, not hers. Kairi's body was in a state of non existence without fading away. The Heartless have no use for a body, so they didn't touch it. Maleficent had no use for her body, so she left it with Riku as a way to win him over. Ansem had no use for her body, he just wanted her Heart.
