Because it's sudden, ignores 50 years of her being thirsty for WWE wrestlers, KISS, and several other hunky stags through the years. As well and generally being Shaggy's Daphne especially her aggressive flirting from Mystery Inc.
Though I would like to see more Coco Diablo.

Scooby Doo though is a franchise where it goes through formula changes and reboots routinely, and it's widely accepted that each time you see the artstyle change, it's a new continuity with a new take on the cast. In one continuity Vincent Vangoul is a powerful warlock, and in another he's an actor. In one scrappy doo is a member of the group, in another they will never speak of him again. Ever. They made a promise. In one, Daphne has a homicidal sock puppet. In another, Fred is in a borderline romantic relationship with his car.
So much changes between the different series, you really can't argue that it's going against long established cannon; because cannon gets tossed out every few years.

An it really boils down to who' doing the writing for a specific character and what sexual preferences they have.
That's my take on it.
For example: Whoever did the writing for The Owl House or She-Ra 2018 clearly wanted to push more "LGBTQ representation" on the charcters. They're still hetero characters in the shows of course but only as side characters mostly and that's fine too.
Sorry for rambling.
I hope we get more Coco on the hub because she's hot & dummy thicc and dark-skinned fictional women make me weak in the knees XD
