I mean, last I checked, the Jedi are the nominal good guys, pretty much space Buddhists when it comes to their beliefs.
So why do is the technique for affecting the weak minded in their repertoire?
That kind of sounds more like a bad guy thing.
Does it have something to do with the Sith oath mentioning breaking chains? So even though the Sith are bad guys even they have some sort of standards?

Remember, the Jedi are pacifists at heart, and to them violence is always an absolute last resort (this is also one reason why Jedi Masters can still have trouble dealing with a Sith Apprentice in combat, combat is pretty much the bread and butter of a Sith, while it's something the Jedi try to avoid).
Like in this scene, had Ahsoka not used the Jedi Mind Trick here, that guy likely would have attacked them for trying to get into an area they're not meant to be in, and likely would have also sounded an alarm. But thanks to the mind trick, Ahsoka was able to avoid needless bloodshed.
There's also the point in the Revenge of the Sith movie where Obi-Wan actually uses the Mind Trick on a drug dealer to make him "rethink his life", and the EU even revealed that the guy legitimately turned over a new leaf and became a law-abiding and constructive member of society.
Is it a bit shady? Sure. But the Jedi nonetheless try to use the ability in a way that will be in the best interests of everyone involved.
Of course, that doesn't mean the Sith can't or won't use the mind trick themselves, but they generally prefer to use simple intimidation or violence to get what they want instead.
