Trivia for anyone who cares: He's like that more or less because his mentor was like that. The first feature he was in, he went back and watched it after it was released, and he was kind of horrified at how mean he was.

Hell's Kitchen and whatnot is him AFTER adjusting to what he thinks is reasonable.

Why is he still at that level? Because, to paraphrase the man himself "If someone comes up to me and claims to be a professional chef, and fails to deliver, I consider it an insult to me, my profession, and the customers, and I can't tolerate that."

Yeah, he's only mean to people who should know better. When he works with kids, he's nice and understanding.
