Well to be the "well actually" guy, farming requires a surprising amount of brains if you want any sort of efficiency.
You need to know how to properly rotate crops so the soil can maintain it's nutrients, at least not with a very handy dandy Nile river.
You need to know the proper time to plant and harvest for each and every separate type of plant.
What type of pests there are, ranging from rats to literal broomrape.
As well as needing to utilize fertilizer.

Surface mining is probably easier. Since even deep ground mining requires complicated construction if you want to, y'know not lose all your hard work due to collapsing tunnels.
