One of Erza's gimmicks is that her right eye is an artificial magitech eye (she lost her real one as a child). This means that any magic or hypnosis that works via the eyes wears off after a while (or doesn't work at all if she only has her right eye open). She's overcome what was shown to be permanent hypnosis on other characters more than once in canon. She totally CAN be brainwashed/mind controlled without issue, just not via methods that work through the victim's eyes.
