Actually they used the dual-lightsaber. It's similar to the one used by her, with the difference that is one single piece of weapon (couldn't be folded).

The one Rey is using seems so... impractical, compared to the same results you can get by using, for example, Darth Maul one, or interlocking hilts like Asaji had.

The only example of a sabre like this is Pong krell from the clone wars. but even he used them only as double sided sabres and only folded them for carrieng purposes

To be fair, Dark Rey did unfold the saber before she attacked. And since the first weapon we saw Rey use was a quarterstaff, it could make sense for her lightsaber to be double-sided with long hilt, allowing her to use it in a similar fashion to her once primarily weapon.

Then again, taking a look back at this trilogy, it was probably done for the edge™, with no real thought behind it.

I can actually see her using the staff version of a lightsaber & treat it almost like she uses her quarter staff.
