Another very hot piece from na_shacho! (with some self hypnosis and unawareness, it could only turn out great)
I translated "Sensei" to teacher but it probably should be translated to something else, it's just i couldn't find how

Sensei can be used as a catch-all professional honorific. I've seen other media use "sensei" for mangaka and the like

Sensei means literally as "fore-studied one", as someone who study/have knowledge about something before you, thus is used to address teachers, doctors, martial art masters and profs all alike, sometimes even for knowledgeable elders who even though doesn't have any profession but still possess wisdom of the ages.
As it doesn't have an equivalent term in English, it's best to just leave it as it is to not lose the integrity of the phrases, or you can swap with, as you said, teachers etc., Or sir madam, or last bet could be Mr./Mrs./Ms.
